Ayurveda Recipe: Almond-Apricot Delights

Almond-Apricot Delights:

Makes 12-16 balls

Ingredients:
– 100g finely ground almonds
– 60g dried apricots – unsulphured
– 35g sunflower seeds – toasted on a low fire
– 1/8 tsp. vanilla powder
– 1⁄4 tsp. cardamom powder
– 2 tbsp. maple syrup
– 1 tsp. ghee

Cut the apricots into small pieces. Mix all the ingredients and knead until a supple yet firm dough forms. Roll smooth round balls about 2 1/2 cm in diameter.
